What is balsamic vinegar?Balsamic vinegar is often called a wine vinegar. However it is really not a wine vinegar at all. It is a traditional Italian vinegar made from concentrated white Trebbiano grapes that are never allowed to ferment. The juice is boiled down to a think syrup and then aged in barrels made from chestnut, cherry wood, ash, mulberry, and juniper. Some vinegars are aged for over 100 years. During the aging process the water slowly evaporates and the barrel infuses flavors into the vinegar. The longer the balsamic has been aged, the sweeter and thicker it becomes, and of course the more expensive it is.
-
How is traditional balsamic vinegar made?Traditional balsamic vinegar is made from white Trebbiano grapes grown in the Modena or Reggio Emilia regions of Italy. The grape juice is cooked down, then aged for at least 12 years in a series of wooden barrels made from different types of wood.
-
What's the difference between traditional and commercial balsamic vinegar?Traditional balsamic vinegar is strictly regulated, aged for at least 12 years, and made only from grape must. Commercial balsamic vinegar is typically made more quickly and may contain additives like caramel coloring or thickeners.
-
What's the difference between balsamic vinegar and balsamic glaze?Balsamic vinegar is the pure product, while balsamic glaze is a reduction of balsamic vinegar, often mixed with a sweetener, resulting in a thicker, syrupy consistency.
-
How should I store balsamic vinegar?Store balsamic vinegar in a cool, dark place. It doesn't need to be refrigerated after opening.
-
Does balsamic vinegar expire?High-quality balsamic vinegar can last for many years when stored properly. Its acidity helps preserve it.
-
How can I identify high-quality balsamic vinegar?Look for vinegar labeled as "Aceto Balsamico Tradizionale" from Modena or Reggio Emilia. Quality balsamic should have a rich, complex flavor, thick consistency, and no added ingredients beyond grape must. If you see a balsamic vinegar that says it has been aged 30 years, and it is $4.00 and as thin as water, it is most likely not aged balsamic, but rather a boiled and sweetened grape juice.
